Carrot Muffin





IngredientMethod
Dry ingredient:
plain flour 180g
double action baking powder 2 tsp
soda bicarbonate 1 tsp
ground cinnamon 2 tsp
salt 1/2 tsp

Other Ingredient:
vanilla estract 1 tsp
brown sugar 60g
corn oil 60ml
carrot juice 50ml
grated carrot 萝卜泥 120g (取自blended)
chopped carrot 萝卜丝 50g
1. Mix the dry ingredient into a bowl, set aside.
2. Whisk egg and oil followed by vanilla extract and brown sugar until well combined.
3. Add Carrot juice into egg mixture.
4. Add Method (1) into egg mixture until combined.
4. Add grated & chopped carrot into the mixture and mix well.
5. spoon mixture into muffin tins and bake for 30 minutes about 180C.

*makes 8-9 muffins
