Triple Chocolate Cookies

80g HP flour
80g LP flour
75g cocoa powder
120g light brown sugar
120g unsalted butter
100g dark chocolate coins
2 A eggs, lightly beaten
60g choc chips
60g white choc, chopped / chips                             
1. Preheat oven to 180 C, line a couple of trays with baking paper.
2. Sift flour, cocoa and brown sugar into a mixing bowl.
3. Combine butter and chocolate in a bowl and melt it in microwave/double boiled.
4. Add butter mixture and eggs to dry ingredients and mix until combined, do not over beat.
5. Stir in choc bits.
6. Drop about 2 tablespoon for each cookie onto tray, flatten slightly and bake for 25-30 mins.
7. Cool for 5 mins before transferring to a wire rack to cool.

*makes 15 cookies
