Lemon Basil Shortbread Cookies

150g all-purpose flour
60g powdered sugar
115g butter
15 basil leaf, chopped
1 teaspoon finely grated lemon zest
1 tablespoon lemon juice
1/4 teaspoon salt


~Preheat oven to 180 degrees C and lightly grease a cookie sheet or use parchment paper
~Beat butter and sugar until light, mix the lemon juice, lemon zest, chopped basil, and salt until well.
~Sift flour and combine into batter and mix well, chill for 30 minutes.
~Scoop cookie dough and roll into balls
~Lightly dust the bottom of a measuring cup with powdered sugar and flatten each cookie to about 1/4 inch thick
~Bake for 20 minutes until lightly golden brown around the edge
~Transfer to wire rack and let cool.

*makes 14-16 cookies
