chocolate banana cheddar cheesecake brownie






Ingredients Methods
Brownies:
100g dark chocolate coin, melted
100g butter
65g light brown sugar
2 A eggs
10ml water/milk
170g mashed ripe banana
95g AP flour
15g cocoa powder
1/2 tsp baking powder   


Cheesecake:
65g cheddar cheese, shredded
50ml milk
50g unsalted butter
3 A egg yolks 
3 A egg whites  
50g caster sugar 
50g low protein flour
0.5 tsp lemon juice                                                                                                                                                                             
Brownies:
1. Place the butter and brown sugar in the bowl of an electric mixer and beat until light and creamy. 
2. Add the eggs one at a time beating well after each addition. Add the banana and melted chocolate and mix to combine. 
3. Sift the flour, cocoa powder and baking powder into the bowl and mix until just combined. 
4. Pour the mixture into a square tin lined with baking paper and smooth out until even, tap the tray lightly to make sure there are no air bubbles. Set aside.



Cheesecake:
1. Place butter and tear up cheddar cheese slices in a bowl over a pot of simmering water, take a spatula and stir to melt, then add in milk and stir until all melted and mixed together. Set aside to cool slightly before use.
2. Add in egg yolks and lemon juice, stir well.
3. Sift in the cake flour into the egg yolk mixture and no lumps.
4. Preheat the oven to 180C with a water . Grease and line (bottom and sides) the baking pan
5. In another mixing bowl, beat egg white till foamy. Gradually add in sugar and beat till soft peaks
6. Use a whisk, mix 1/3 of egg white mixture with cheese mixture, mix to combine.
7. Gently fold in the balance egg white mixture with a spatula, mix well.
8. Pour the batter into the prepared pan and smooth out the surface.
9. Bake the cake in the oven for 180C, 35 minutes or till the tester comes out clean.
