avocado tofu cheesecake





Ingredients Methods
Ingredients A:
120g cream cheese
100g silken/smooth tofu
55g ripped avocado
2 egg yolks
55ml soy milk
8ml lemon juice
1 tsp vanilla extract
70g low protein flour

Ingredients B:
2 egg whites
65g caster sugar                                                                         
1. Blend all ingredients A (except flour) in a blender until smooth.  Put cheese mixture in a large bowl and add flour into cheese mixture and mix well .
2. In a separate mixing bowl, beat ingredients B until soft peak form.
3. Use a whisk to mix 1/3 soft meringues with cheese mixture.
4. Gently fold in the rest with spatula.
5. Pour the mixture into 6' cake tin and steam bake 55-65 minutes, 180C.
