Mint Mocha TimTam Cheesecake





IngredientMethod
Base : 
110g crushed mocha shortbread,
20g butter 

Filling: 
250g cream cheese, 
50g caster sugar,
50ml hot water,
1 tsp coffee powder,
2 tbsp cocoa powder,
1 tbsp corn starch,
2 tbsp LP Flour
1.5 tsp lemon juice
2 A eggs
1.5 tsp mocha emulco
3-4 pcs timtam, cut into small pieces
1.5 tsp peppermint essence
few drops green food coloring

Glaze : 
60g dark chocolate coin
20ml milk 

Topping: 
Brookside dark chocolatiers 

                                                                                                                                                         
                                                                                                                                     
1 Base: stir all ingredients until combined. Press mixture into base of 6 inches cake tin.

2 Filling: Mix well coffee powder and cocoa powder with hot water. Set aside

Beat cream cheese and sugar  until smooth. Then Add egg, one at a time, beating well after each addition. Stir lemon juice, corn starch and LP flour and mix well, Pour 1/3 batter into another bowl and mix it with the mint essence and green food coloring. Set aside.

4 For the other cheese batter, mix the mocha liquid and emulco, Finally, add the timtam cookies into batter and mix with spatula.

5 Pour the mocha batter into cake pan, bake for 15 min, 180C. Pour the mint batter onto the mocha batter carefully and continue bake for 25-30 mintues. Lets cool and top with the brookside chocolate. Refrigerate for 4 hours or until set.
