Milky Buttercream





IngredientMethod
500g pure butter, cut into cube

255g milk+ 150g caster sugar

75g milk+ 35g corn starch, mix
1. In medium heat, cook 255g milk and sugar until boiled.
2. Pour the corn starch milk mixture into it and keep stirring until thicken. Watch closely and stir frequently to avoid burning. Remove from heat.
3. Pass through sieve to remove big lump. Cool slightly.
4. Transfer the milk mixture into mixer bowl, beat in high speed untill cooled.
5. In the low speed, add the chilled butter cube, one at a time, mix until incorporated. 
6. Continue beating in high speed about 10min until it reached a silky smooth texture.
