durian filling: 300g durian flesh 15g icing sugar 4g gelatin powder + 10g hot water snow skin: A: 95g cooked glutinous rice flour 70g icing sugar 2tbsp pumpkin powder B: 15g shortening C: 50g cooled water 30g Lemon egg custard | durian filling: 1。Mash durian flesh and icing sugar until puree form. Add milk and melted gelatin into durian puree and mix well. 2。Wrap 70g of durian filling into round shape by using plastic wrap. Freeze for 1 hour until set. snow skin: 1. Sift ingredient A, add ingredient B and mix until well combined. Add ingredient C and knead into dough until elastic and smooth (弹性和光滑). Chill for 30 minutes. Divide into 45g each. Roll into balls. Assembly: 1. Flatten snow skin, and wrap filling with snow skin. Press it into a mooncake mould (Apply some cooked glutinous rice flour on the mooncake to avoid stick into the mould). Tag lightly to unmould. 2. Chill for 4 hrs or overnight before served. *make 5 |
