Homemade Toddy (Kallu)

 A fermented coconut water / Indian traditional poor's men beer



IngredientMethod


125ml coconut water
3/4tbsp sugar  (adjust accordingly)
1/2 pinch instant yeast                                            


                                                             


1. In a bowl add the filtered coconut water.
2. Add sugar and yeast into coconut water and mix it well to dissolve the sugar and yeast.
3. Then filter it through a strainer and pour it in an earthen pot / jug and cover it with a pieace of cloth or tie it with rubber band.
4. Keep it in a warm place & dark place for fermentation for 24-36 hours. (Best consume: 36 hrs)

*makes 125ml toddy


Note:
1. to make a huge amount:
Ingredient
1L coconut water
2-6tbsp sugar (Adjust the sugar according to the sweetness level of coconut water.)
1tsp instant yeast
               
2. Can use warm toddy for preparing nyonya huat kueh or aapam.
3. Consume/use toddy between 24-36 hrs of fermenting.
4. Can Chill toddy for direct consumption by keeping in the fridge, in an earthen pot/jug for future use. Then better consume/use it within 2 days for the best results.
5. If add less sugar or keep the toddy at room temperature for more than 72 hours, it will turn into vinegar, which can be filtered and used in cooking.
