Pandan Butter Cake

200g butter
130g caster sugar
3 A eggs
160g LP flour, sifted
20g organic coconut milk powder
1 1/2tsp baking powder, sifted
0.5 tsp baking soda
45ml milk/soya milk
1 tsp apito pandan
1.5tsp pandan essence                                                                              

1. Place the butter and sugar in the bowl of an electric mixer and beat until light and creamy.
2. Add one egg at a time, beating well after each addition. After well combine, slightly increase speed and add pandan essense and apito pandan and beat for 1 minute till fluffy.
3. Add the flour, coconut milk and baking powder (sifted together) and beat well to combine, fold milk alternately and combine well.
4. Pour the batter into the 6/7' cake tin (greased with butter).
5. Tap the tin to remove any air bubbles.
6. Bake at preheated oven at 180c for 40-50mins or until a skewer insert and come out clean.
