Filling: 200g Cream cheese, soften 20g butter 20g condensed milk 2 B Egg yolk 20g Cornstarch 40g Sour cream 30g Milk 30g caster sugar 15g cocoa powder 20g dark chocolate coins, melted, reserved 1/2 tbsp 1tsp vanilla essence 2 B Egg white 30g Granulated sugar 3ml lemon juice/rice vinegar Base: 10 pcs Oreo chocolate cookies | 1. Place cream cheese, butter, sugar and condensed milk into a bowl and use a whisk to cream it. Add the egg yolk to the cream cheese. Combine well. 2. Add sour cream, milk, cocoa, melted chocolate and corn starch and mix well. 3. In another bowl, add the egg whites, lemon juice and granulated sugar and whip with a whisk until soft peaks form. If you whip it too much, it will separate when baked, so be careful! 4. Add 1/3 of the egg whites to cheese batter. Mix it in using cutting motions by scooping up from the bottom of the mixture. Add the rest of the egg whites and combine with a rubber spatula equally while keeping the air bubbles intact. 5. Spoon 1-2tbsp batter into reserved melted chocolate and mix well. 6. Place 1 pc of oreo cookies into cupcake mould. Pour the batter into it carefully until 3/4 full. Spoon 1tsp of step 5 on top the batter to create marble effect. Tap to release air burble. 7. Bake @ 170C for 25 minutes until cooked.
8. Let it refrigerate for a couple of hours before serve.
