Coconut Brigadeiro Truffles

Brigadeiros are Brazilian candies that owe their melt-in-your-mouth texture to sweetened condensed milk that's cooked down until it's thick and fudge-like.

IngredientMethod
5g butter
100g sweetened condensed milk
30ml coconut milk

topping: some dessicated Coconut

1. In a pot over medium-low heat, put the butter, condensed milk, and coconut milk, stirring continuously until mixture thickens and pull together into a dense batter, about 5-8 minutes.
2. When the mixture is ready, you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
3. Pour onto a greased plate, then chill for 1 hour.
4. Shape and roll the chilled mixture into balls.
5. Roll the balls in topping and serve.
6. Store brigadeiro in a tightly covered container at room temperature for up to two days or in the refrigerator for up to two weeks. ( If refrigerating, bring to room temperature before serving for the best flavor and texture.)
