Chocolate Mocca Cake


IngredientMethod
ing A:
125g butter
125g sugar
3 A egg yolks
3 A egg whites (beaten)
115g LP flour
1 tsp baking powder
1/2 tsp baking soda
a pinch of salt

ing B:
40g cocoa powder
1 tsp coffee powder
125ml water
1 tsp vanilla essence

Icing glaze:
30g butter
40g cocoa powder
120g sugar
1 A egg yolks
1 tsp coffee powder
95ml water
1/2 tsp salt
125ml milk
40g corn flour                    
1 tsp vanilla essence  
1. Cook ing B in pot over low fire until dissolved and cool, set aside.
2. Beat butter and sugar until fluffy.
3. Beat in egg yolks.
4. Fold in beaten egg white and the flour mixture.
5. Mix in step 1.
6. Pour into 8" heart cake pan that lined with parchment paper at bottom.
7. Bake in oven for 45 minutes at 180C.


Glaze:
1. Cook all ingredients using double boiled method except vanilla essence over low fire until thick.
2. Cool mixture, add vanilla and coat the cake.
