Dark Sugar Oat Bran Cupcakes



IngredientMethod
150g butter
125g LP flour
40g oat bran fiber
1/2 tsp baking soda
1.5 tsp baking powder
120g  dark sugar, sifted
20g icing sugar
3 A eggs
50g Sour Cream                                
                      
1. Sift flour, baking powder and baking soda.
2. Beat the butter and sugars until creamy, light and fluffy.
3. Add the eggs, one at a time, mixing each until fully incorporated.
4. Slowly add the dry ingredients, alternately with sour cream until well combined.
5. Pour the batter into prepared cupcakes moulds, bake @ 180C for 25 minutes.

*makes 11-12 cupcakes
