Avocado Cupcakes



IngredientMethod
100g LP flour 
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
60g of sugar
1 A egg
1/2 ripe avocado
90ml vegetable oil,  
90ml milk
1 tbsp honey

                                                                  
1 Sift the flour, baking powder, baking soda and salt together and set aside.
2 Mash the avocado very well or pass it through sieve, set aside.
4 Beat the sugar and eggs together, on high speed, until light and fluffy, about 5-7 minutes.
5 Lower the mixer to medium, drizzle in the oil and honey and beat until well combined.
6 Add the avocado mash.
7 Alternating, beat in dry ingredients and milk on low speed. Starting and ending with dry ingredients.
8 Divide the batter between the cupcake cups.
9 Bake for 25-30 minutes @ 180C.

*makes 7-8 cupcakes
