12-15 pieces matured pandan leaves. 120g water | 1. Rinse the leaves to get rid of dirt. 2. Use a pair of scissors and cut the pandan leaves around 1cm-2cm length. 3. Add 120g water into the blender and add half of the pandan leaves and blend it. Continue add the pandan leave bit by bit into blender until finished. 4. Pour the pandan pulp through a fine strainer/clean cloth. Use the back of a spoon to press on the pulp or squeeze by hand to get the juice out. 5. Transfer pandan juice in to a jar/glass. To make pandan extract, cover with a lid or cling film and leave it in the fridge for few days. Don’t place the jar/glass at the fridge door as frequent movement will slow down the separation process 6. Two layers will been seen after few days and the lower layer is the pandan extract. 7. To use the homemade pandan extract, slowly pour out the upper layer into a bowl. 8. May store in refrigerator up to 1-2 weeks.
