Lava Cheese Chocolate Tarts

Crust:
30g unsalted butter, softened
45g all-purpose flour
20g sugar
2tsp cocoa powder
1/3 teaspoon salt


Filling:
Lava cheese custard filling                                              

1. Preheat the oven to 180°C.
2. Combine the butter with the flour, sugar, cocoa and salt; pulse until coarse crumbs form.
3. Press the crumbs into a tart moulds to form a crust; prick all over with a fork.
4. Freeze for 5 minutes, until firm. Bake in the medium of the oven for 10 minutes. Remove from oven and cool slightly, using a small spoon to press edge of the crust to reshape it. Resend to oven and continue bake for 10 minutes until the crust is lightly browned and cooked through.
5. Increase oven temperature to 210°C. Pour 3 tbsp of cheese filling into tarts. Bake in 8-10 minutes.  (Do not over bake, else the filling will over cooked.)
4. Remove from heat  and leave to cool before serve.

* makes 4 tarts.
