Lava Yolks Black Sesame Snow Skin Mooncakes





IngredientMethod
Filling:
765g white kidney paste
75g roasted black sesame powder

Lava egg yolks:
15g caster sugar
50g milk powder
60g butter
1tbsp custard powder
2.5tbsp condensed milk
45-55g milk
3pcs of salted egg yolks, cooked and puree

  
Lava Egg yolks:
1. Mix all ing until combined.
2. Cook the batter using double boiled method until slightly thick. Cool completely.
3. Pour into the container/silicone mould and freeze until harden.
4. Cut into small pcs or unmould from silicone mould. Freeze until ready to use.

Filling:
1. Mix white kidney paste and black sesame powder until well combined.
2. Divide filling into 9 apprv 85g.
3. Flatten the black sesame filling and add freeze lava egg yolks into center and wrap well, roll into ball and chill back for later use.

snow skin:
1 pack of snowskin mooncake mix
1tbsp pumpkin powder                                                                                                               
snow skin:
1. Follow the instruction on the package.
2. Divide into 45g each. Roll into balls.
preparation:
3-4tbsp cooked glutinous rice flour

Assembly:
1. Flatten snow skin, and wrap filling with snow skin. Press it into a mooncake mould (Apply some cooked glutinous rice flour on the mooncake to avoid stick into the mould). Tag lightly to unmould.
2. Chill for 4 hrs or overnight before served.

*makes 9 of 125g mooncakes
