Purple Sweet Potato Coconut Oozing Cheese Quarter Bun (Guschlbauer Austrian Cheese Buns) 五层流心芝士包

Dough:
255g japanese bread flour
90g purple sweet potato, mashed
30g Kara coconut cream powder 
30g milk powder
60g caster sugar
1/2 tsp salt
3g instant yeast
±140g water divided use 
20g butter


Lava cream cheese Fillings:
100g cream cheese
20g condensed milk
30g sugar
50g purple sweet potato, mashed
1tbsp butter
40g sour cream
100g milk, divided use
10g corn starch
1tsp vanilla essence
5ml lemon juice
15g Kara coconut cream powder


Dust (mix well):
30g milk powder
5g Kara coconut cream powder
2tsp purple sweet potato powder


                                                                                                                                                                             
FOR STAND MIXER WITH DOUGH HOOK:
1.  Place all the ingredients and 130g water in a bowl.  Mix until a dough forms then pour remaining water bit by bit and continue knead for about 15-25 minutes until elastic. 

2. Cover with plastic wrap, set aside about 2 hours for ferment.

3. Once dough has risen, place each on a floured surface and knead lightly. Rest for 15 minutes.

4. Flatten dough into a round disc.

5. Place in a greased 7" cake pan and let dough prove for second time (about 1 hrs)

6. Bake @ 180C for 30-40min. Remove from oven and cool completely.

7. Filling: Beat cream cheese, butter and sugar until smooth.Add the rest ingredient and mix until combined and no lump. Strain through a strainer to puree the custard to remove any big lumps. This is optional. Transfer to steel bowl.

8. Place the steel bowl into a medium pan/pot with barely simmering water, turn to medium low heat. (bain marie method, to create a gentle and uniform heat for cooking custard) . Keep stirring till until the exact consistency desired (slightly thicken),  about 2-4 minutes.

7. Assembly: Cut the whole round bun into 4-6. Slice horizontally into 2 for each quarter bun, slather the cream cheese filling into it. Spread some filling into two surface and dust with purple milk powder. 

* 3 ways to eat:
~room temp
~chill for half hour, will be ice cream cake texture
~reheat using mircowave for few sec, will turns to lava effect.

    Can you adapt this so it doesn't use coconut powder and doesn't use sweet potato?
