Mint Chocolate Cheesecake


IngredientMethod

Cheese batter: 
250g cream cheese
60g caster sugar
1tsp mint essence
few drop green food coloring

Chocolate Cake:
180g butter
150g caster sugar
3 A eggs
3 tbsps @ 25g cocoa powder
120g LP flour
1tsp baking powder                                                           
Cheese batter: 
1. Beat the cream cheese and sugar until smooth.
2, Add in mint essence and green food coloring and continue beat until combined, set aside.

Chocolate Cake:
1. Beat the butter and sugar until light.
2. Add the eggs, one at a time, mixing each until fully incorporated.
3. Slowly add the dry ingredients and beat on low speed until well combined.

Assembly:
1. Pour half of the chocolate cake batter onto the pan carefully.
2. Pour the Cheese batter filling into the pan and spread carefully to cover the surface.
3. Pour remaining of the chocolate cake batter into the pan and smear the surface.
4. Bake @ 165C for 60 minutes or until cooked.
