Light Cheddar Sponge Cake

Cake:
A:
90g or 5 slices cheddar cheese
110ml milk
75g butter

B:
150g LP Flour
2 tsp baking powder
1/2 tsp vanilla essence

C:
5 A egg yolks
65g caster sugar

D:
5 A egg whites
65g caster sugar
1/3 tsp cream of tartar

                                                            

1. Place butter, milk and cheddar cheese slices in a bowl and microwave for 2.5 min @ medium heat until melted. Set aside to cool slightly before use.
2. Beat egg yolks & sugar with medium speed for about 2-3 minutes until light.
3. Add ing B & step 1 into egg yolks batter and stir well until smooth.
4. In another mixing bowl, beat egg white till foamy. Gradually add in sugar and beat till medium peaks form.
5. Use a whisk, mix 1/3 of egg white mixture with cheese mixture, mix to combine.
6. Gently fold in the balance egg white mixture with a spatula, mix well.
7. Pour the batter into the 7' prepared pan and smooth out the surface.
8. Steam bake the cake in the oven for 180C, 40 minutes or till the tester comes out clean.
9. Cool cake in pan for 5 mins before un-moulding.
