Cocoa Horlicks Steamed Cake




IngredientMethod
3 A eggs
90g AP flour
90 caster sugar
1/8 tsp fine salt

flavor:
10g cocoa powder+20ml hot water
25g horlicks powder+15ml hot water

Topping:
some multigrain cereal
1. Beat eggs using high speed until bubbles appear. Add in sugar in three batches until batter turns fluffy and white.
2. To test batter, lift up beater for three seconds and wait for batter to drip. Next, use low speed to beat for another 5 minutes.
3. Fold in flour in 3 sections using a spatula to mix well.
4. Divide into two portions. 1st portion mix with cocoa mixture and the last portion mix with horlicks mixture.
5. Line a 6" cake pan, spoon 3-4 ladles of cocoa batter, level it. Steam for 4-6 minutes in steamer.
6. Uncover the steamer, ladle in 3-4 ladles of horlicks batter. Steam for 4-6 minustes. Alternate until batter is finished.
7. Steam the final layer by topping some multigrain cereal for 10 minutes. Check cake with a cake tester. Cool completely before served.
