Cake: 115g butter, softened 100g granulated sugar 180g cake flour 2 teaspoons baking powder 1/2 tsp fine salt 125g whole milk, room temperature 1 teaspoon vanilla extract 4 B egg whites Coloring: butterfly blue pea powder charcoal powder few ml of milk Frosting A: 400g hot heavy cream 160g white chocolate coins 8g gelatin powder 30g hot water Frosting B: 250g butter 150g condensed milk 2g butterfly blue pea powder+5g milk | 1. Preheat oven to 180°C. Prepare two 8" round cake pan with butter or lined wit parchment paper at bottom. 2. Beat butter at medium speed with a hand-held mixer until creamy, roughly 2-3 minutes. 3. Gradually add sugar, beating until light and fluffy. 4. Stir together milk and vanilla. 5. Sift together flour, salt and baking powder; add to butter mixture alternately with milk mixture, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. 6. Divide the batter into two equals portion, apprv 240g. Coloring the batter with food powder coloring + little bit of milk. 7. Beat egg whites at medium speed until stiff peaks form. Divide into two equal portions. Gently fold into batter. 7. Pour batter into a 8" prepared round pans. 8. Bake for 30-40 minutes or until a wooden pick inserted in center comes out clean. 9. Cool in pan on wire rack for 10 minutes. *p/s: to make 4 layer of 8" cake, double up the ing. Frosting A: 1. Pour the butterfly blue pea powder and hot cream over the white chocolate coins and stir gently until all the chocolate melted. 2. Wrap it with cling film and refrigerate overnight or till completely cool. 3. Sprinkle the gelatin powder into hot water and sit for 5 minutes. Microwave for few seconds until melted. 4. Remove the cling film and fold 3tbsp of the cream into the gelatin mixture to lighten it. Fold in remaining cream using a rubber spatula. 5. Whip the mixture to stiff peaks using hand mixer. Frosting B: 1. Beat butter for 1 minute. 2. Pour condensed milk over it and continue beat using high speed until stiff. 3. Add blue pea milk until combined. Decorate as desired |
