Durian Omochi




IngredientMethod
Mochi:
glutinous rice flour 105g
caster sugar 20g
water160ml
20ml homemade corn syrup
some corn starch
some veg oil

Filling: (mix well)
140g Durian flesh, puree 10g icing sugar
1 tsp gelatin powder+ 10ml hot water, microwave til dissolved                                                                                         
1. Divide the filling into 40g and each cover with plastic wrap and wrap into circle.
2. Chill for 1-2 hours.
3. In a  bowl, mix glutinous rice flour, sugar and water with a whisk. Using a silicone spatula, stir until the mixture has reached a thick consistency.
4. Steam the mixture for 15-20minutes or until cooked and translucent . Quickly add homemade corn syrup while still hot and stir until combined.
5. Sift corn starch on the tray and put the mochi on top.
6. Divide the mochi into 6 equal pieces. Put some veg oil / corn starch on your hands and flatten and expand each mochi into a 3” round. Then put the durian filling on top of it. Start covering the durian from all sides and use your thumb to hold the mochi on top.
