Chocolate & Matcha Butter Cookies

250g lurpak salted butter
140g caster sugar  
260g AP flour
1B egg
1tsp vanilla extract

flavor A:
30g cocoa powder

flavor B:
10g matcha powder+15g AP flour
                                           

1/4 cup butterscotch chips
1/4 cup chocolate chips                                                                          

                                                                  

1. Beat the butter and sugar on high speed until light and fluffy, then beat in the egg and vanilla extract
2. Add the flour into the butter mixture, beat in on low speed just until all incorporated, don’t overbeat.
3. Divide into two equal portion apprv 350g, one mix with flavor A and another one portion mix wit flavor B.
4. Turn the dough over onto your counter, chocolate dough mix with chocolate chips; matcha dough mix with butterscotch chips. Then shape into a round log, wrap into plastic wrap and freeze for about 15 minutes.
5. Preheat your oven to 160°C, line a baking sheet with parchment paper
6. Slice the log into 1/3 inch thick (1 cm) cookies, place them on the prepared baking sheet spacing them about 2 inches apart
7. Bake for 15 to 20 minutes or until the edges are firm to the touch and the center still a bit soft, if you like butter cookies crispier, you can bake them up to 10 minutes
8. Place the baking sheet on a cooling rack to cool at least 10 minutes, don’t touch the cookies at this time as they will be very soft and fragile
