Basque Burnt Cheesecake 巴斯克烤芝士蛋糕

300g cream cheese
125g heavy cream
80g sour cream
3 B eggs
110g caster sugar
25g corn starch
1tsp vanilla essence
1/2tsp salt
1tsp lemon juice                                            
1.  Line the 6.5" pan with parchment paper. Make it so that the paper sticks out about 1cm over the edges. Cut a circle out of parchment paper to place in the bottom. Preheat the oven to 180°C.
2. Beat cream cheese and sugar  until smooth. Then add egg, one at a time, beating well after each addition. Stir in remaining ingredients and mix well.
Or Place all ingredients into a food processor and blend until well combined
3. Pour batter into prepared pan. 
4. Baked for 30-35 min @ 180C.  Turn to upper hear for another 5min to create burnt skin.
5. Remove and cool completely. Chill for overnight before unmould.
