Homemade Red Bean Paste (low sugar)

250g red bean/azuki bean
water
60g corn oil
80g caster sugar
45g light brown sugar
1tbsp  homemade light corn syrup (optional)        
1. Sock red bean into water for 4 hours or overnight.
2. Rinse and use a pot cook azuki with water (til 1-2 inches above azuki bean) with high heat until cooked and soft.
3. Drain off the water and lets cool completely.
4. Blend the soft red bean using food processor until smooth and puree form.
5. To make a fine paste: press the puree bean through a fine sieve to remove any large puree chunks. 
6. Heat up corn oil and sugar using wok until sugar melted.
7. Pour the red bean puree into step 5 and keep stirring.
8. Add corn syrup and continue stirring until thick enough.
9. Cool completely and wrap with plastic wrapped in refrigerator.
